Yield: 8 servings
Ingredients:
- 4 zucchinis
- 4 oz ground turkey
- 1/2 cup shredded low-fat cheese
- 1 clove garlic, diced
- ¼ cup diced mushrooms
- 1 cup marinara sauce
- Salt, pepper and oregano to taste
- Cooking spray
Directions:
- Pre-heat oven to 375 degrees.
- Sauté garlic with cooking spray on the stove at medium heat. Add mushrooms and turkey to cook until brown.
- Add marinara sauce. Cook about 10 to 15 minutes. Sprinkle salt, pepper and oregano. Stir all the ingredients until simmering.
- Prepare zucchini crust by slicing them in half and scooping out the pulp. Place on a baking sheet.
- Spoon the sauce-mixture in the middle of each zucchini crust.
- Bake in the oven for about 10 to 15 minutes. Sprinkle the cheese, and return to the oven, baking until golden brown.
